Riding, Banana Pies, and Fluff

It was a pretty quiet weekend here in Victoria – we both spent a good chunk of our weekend riding,

and when we weren’t riding, it was cleanup or making wonderful things to eat. Like this delightful banana peanut-butter cream pie. I didn’t have all the ingredients on hand for Jill's recipe. So I did some hunting online and found a recipe that was do-able with the minimal supplies we had on hand.

This pie lasted all of two days in our house!

Crust: Graham Crackers + butter

Peanut Butter filling:
3 ounces cream cheese, room temperature

1/2 cup powdered sugar

1 teaspoon vanilla extract

1/3 cup creamy peanut butter (do not use old-fashioned or freshly ground)

2/3 cup chilled heavy whipping cream

Chocolate shavings 
 
Using electric mixer, beat cream cheese and powdered sugar in medium bowl until smooth. Beat in vanilla, then peanut butter. Beat cream in another medium bowl until firm peaks form. Fold large spoonful of whipped cream into peanut mixture to loosen, then fold in remaining cream in 2 additions. Place sliced bananas in one layer on the graham cracker crumb crust. Spread peanut butter layer evenly over sliced bananas. Chill at least 3 hours. DO AHEAD Can be made 8 hours ahead. Keep chilled.


Thinly slice remaining banana on diagonal. Toss with remaining 1 tablespoon orange juice, then pat dry with paper towels. Arrange banana slices around top edge of pie. Sprinkle chocolate shavings over bananas, if desired, and serve.
 
 
 
 

I’ve also been working on my first quilt, and it’s going well. It was a daunting task in the beginning, but surprisingly the quilt wasn’t as hard as I thought it’d be in comparison to some of the other projects I’ve made! This is the stage in which I'm figuring out how to lay out the pattern:

 

 

And Jersey, well, he had a great weekend too.

He’s been shedding a lot, and leaves clumps of fur EVERYWHERE. I even find clumps of fur on the floor at work because they hitch in on my pant legs.
